It’s actually “funnier” than that.
Apparently, some properties get processed.
For instance, changes to properties.put(PersistenceUnitProperties.JDBC_URL become visible in the log, whereas properties.put(PersistenceUnitProperties.LOGGING_LEVEL so not seem to.
